Kerala, synonymous with exotic spices, accounts for more than 70% of spice export from the country. Over 95% of pepper produced in the country is from Kerala, which is also the hub of a variety of spice-based products. Besides traditional application as a flavouring and preservative agent in food and beverages, spices today caters to industries such as cosmetics, aromatics, oils & oleoresins, pharmaceuticals, etc. Spices also provide the right flavour to the fast growing food processing industry in the state. The fact that Kerala Infrastructure Development Corporation (KINFRA) has already established four state-of-the-art food-processing parks shows the vibrancy of the food-processing sector in the State. Kerala has 300 curry powder and masala powder manufacturing units in the organised sector alone. The marine food and packaged food sectors of the State are also growing phenomenally.
